Want a historical account of how the saying “As American as Coleslaw” gave way to the now popular “As American as Apple Pie”? How about a story about how I dropped my kids off at school before I made this coleslaw?

Okay, okay.
Quick intro though: Most pre-bought coleslaw is made with ingredients such as unhealthy fats and refined sugar. This No Junk Coleslaw uses natural ingredients and a touch of honey for a mildly sweet and tangy slaw.
No Junk Coleslaw
Ingredients:
1/2 head of green cabbage
1 medium-large carrot
1 Tbsp avocado oil-based mayonnaise
2 tsp apple cider vinegar
2 tsp honey
1 tsp stone ground mustard
1/4 tsp sea salt or Himalayan salt
Ground pepper, to taste
Directions:
Cut cabbage into thin strips.
Cut the carrot into thin strips. I use a spiral slicer for this.
Toss the carrot strips and cabbage strips together in a large bowl.
In a separate small bowl, whisk together mayonnaise, vinegar, honey, mustard, and salt.
Pour the dressing over the cabbage/carrot mixture and toss until evenly coated.
Optional: Top with some fresh ground pepper.
Tips:
Look for mayo that has avocado oil as the oil. Primal Kitchen or Sir Kensington’s are my favorites.
Look for mustard without artificial colors or flavors.
In this recipe I used Manuka honey, which has some health benefits. That stuff is usually not cheap, but I found some deeply discounted at my local grocery store. A local honey from your area is a great choice too.
